With a granddaughter who can't handle wheat or peanuts, I came up with some granola bars that she can enjoy!
- 4 ½ cups GF rolled oats (used Red Mill)
- 3 cups Rice Chex cereal (crushed to make 3 cups)
- ½ cup butter
- ½ honey
- 1 cup brown sugar (packed)
- 2 teaspoons vanilla
- 1 cup mini chocolate chips (Chipits)
- 1 cup semi-sweet chocolate chips, melted for drizzle.
- Combine oats and rice cereal in large bowl.
- Heat butter, honey and brown sugar on stovetop until mixture comes to a boil. Reduce heat to low and cook for 2 minutes, while stirring.
- Remove from heat and add vanilla extract.
- Stir sauce into dry ingredients and stir until everything is coated.
- Add chips and stir to combine.
- Press into 11” x 17” pan, lined with parchment paper.
- Refrigerate for 2 hours (or speed up process by putting in the freezer for a bit).
- Melt chips for drizzle in microwave on high for 90 seconds (stirring every 30 seconds).
- Drizzle over bars. Return to fridge (or freezer) until chocolate drizzle is hard.
- Remove bars from pan to cutting board and cut into bars of desired size.
